Toss and gently push noodles around the pan to coat with sauce. Gently mix in tofu, scrambled egg, salt, chili flakes, and 3 tablespoons peanuts; toss to mix all ingredients. Mix in bean sprouts and green onions, reserving about 1 tablespoon of each for garnish. Cook and stir until bean sprouts have softened slightly, 1 to 2 minutes.
Sauté carrots/peppers, garlic and onions in non stick pan or wok. Push to side of the pan. Add beaten eggs and cook, breaking up with spatula into small pieces. Add noodles, chopped cooked chicken (or tofu or shrimp), half the bean sprouts and cilantro. Pour over sauce and toss all together.

For the sauce, combine the tamarind, palm sugar, fish sauce and dark soy sauce in a small saucepan over medium-high heat. Cook for 1-2 minutes until the sugar has dissolved. Remove from heat and set aside for later. Heat oil in a wok or large frying pan over high heat. Add the shallot and stir-fry for 30 seconds.

Directions. Heat oil in a large skillet on medium heat. Bring a pot of water to a boil and prepare rice noodles as directed on the box. Run shrimp under cold water and de-tail if needed. Add frozen stir fry vegetables, stir and cover. Let cook, stirring occasionally until vegetables are hot and tender.
